Preparing Grape Leaves for Dolmas
The type of grape leaves you use will determine how to prepare them.
Fresh Grape Leaves
If you're lucky enough to have fresh grape leaves, you'll need to blanch them before using them for dolmas. This softens them and makes them easier to roll.
- Wash the leaves thoroughly under cold running water.
- Blanch: Bring a large pot of salted water to a boil.
Carefully add the leaves and blanch for about 1-2 minutes, or until they turn a bright green. - Shock: Immediately transfer the blanched leaves to a bowl of ice water to stop the cooking process.
- Drain: Remove the leaves from the ice water and pat them dry with paper towels.
Preserved Grape Leaves
These are typically sold in jars and come packed in brine.
- Rinse: Rinse the leaves thoroughly under cold water to remove excess salt.
- Blanch (optional): Some people prefer to blanch preserved leaves for a few seconds to remove any bitterness.
Using the Leaves
Once your grape leaves are prepared, you can start stuffing them with your favorite filling. There are many different variations of dolma fillings, but they typically include rice, meat (optional), herbs, and spices.
